The process is delicate; the cuts must be just right. A shallow cut won’t release sap, while a deep cut could harm the tree. Timing is essential because the sap ferments quickly as the day warms up. Fresh sap acts as a natural energy drink, but if left to ferment, it turns into tari (toddy).
